About my classes



What makes me and my business quite unique, I make and bake all my own cakes, do not source from a bakery,as well as teach cake decorating classes and encourage students to do the same.
I run cake classes for total begineers as well as more difficult designs as well as teach how to bake cakes, cookies and macaroons too!

My classes are professional,enjoyable and have amazing results and I create a wonderful enviroment to learn by having the very best cake decorating facilities in Brisbane, up to date tools and offer further extras in each class.

My classes are small, so why would you want to go anywhere else?

I am also contactable after a class, via telephone or email for any other cake advise that you may need.

I offer business workshops on how to become licensed and registered for cake businesses as well as offer mentoring sessions to cake makers wanting to know all the extras too.


My aim is to have every student leave with a sense of achievement. You only need to see the students pictures to see their looks of achivement in their smiles!

Whether you are a beginner, intermediate or an advanced learner I have lots of classes to suit you.

My classes are unique in the fact the numbers in the class are kept small,  so that you can learn the very most from each class.

You will be working in a fully licensed and registered, air conditioned cake decorating studio.You will be surrounding with amazing works of cake art and will be leaving the class at the end even more inspired.

Everything is provided in the class,cakes,icing and all tools.Even a box to take your finished creation home.


Just bring an apron!

As you are working in licensed kitchen  premises, enclosed shoes are required

I am a passionate cake baker, cake decorator and cake business owner who feels that cake baking and decorating needs to be more openly shared otherwise could become a lost skilled art.

Like most hobbies and crafts,equipment can become costly. What makes my classes unique, I provide everything you need for the day. All cakes and biscuits are baked by me and not outsourced, which is quite rare in this industry as a lot of commercial cake decorators do not even bake their own goods but will buy them in.

I provide amazing baked cakes, not burnt with heavy crusts that you have to fill with so much syrup and ganache to even make it edible!

I will also provide you with high quality ingredients for the hands-on baking clasees and all ingredients for the cupcakes, cake pops macaroon and the cookie workhops.




What are my qualifications?

I am a qualified chef and pastry chef and have been in the food industry for the past 28 years( makes me feel old when I type this!) I am qualified with more British  City and Guilds in sugar paste and royal icing too. I have my 7307 which is the equivalent to the Teachers Cerificate 4 here in Australia and am qualified to teach adult education, in the Uk .I am also a qualified swimming instructor but that will be used in my next life!!!
I also gave my City and Guilds in sugar craft and sugar decoration.



Where am I based?
I am based in Daisy Hill south of Brisbane approx. 40 minutes from the Gold Coast and just over an hour from the Sunshine Coast. I am just off exit 24 of the Pacific highway, very close to my favourite store Ikea!

Booking a class  can be made direct via the online storeor  via telephone 3388 2453 or email jackie@contemporarycakes.com.au

All classes require full payment before attending, I will send you the booking and payment details.

If you have not paid you will not be booked in.
Bookings are made on a first in basis.

Once payment has been received I will email you with a booking confirmation and receipt of payment.

Payments can be made by the online store,internet banking,  payment by cheque made payable to Mrs Thompson or a money order available to buy at Australia post.

Gift vouchers are also available to purchase.

If a class is cancelled, a full refund of the class will be made, or if you choose, transferred to another class to the same value. No refunds or transfers will be given for classes not attended. Please send someone to take your place.

What do you need to know?

Beginners classes are suitable for students who have never tried cake decorating before or may have started but need a little guidance. Is that you?  if so I suggest you start with the beginninners classes .

You will be introduced to sugar paste, ganache , tools and various techniques to ensure your cake decorating skills start  to develop. The baking cupcake class is the easiest class to begin with due to the small size of the decorating.If you need to improve your baking skills I recommend the Beginners 12 Chocolate mud cake demonstration, we will troubleshoot and discuss the importance of each stages in the making of the cake.

Whether you are a beginner, intermediate or an advanced learner I have lots of classes to suit you.

My classes are small and intimate with no large groups where you are trying to get the teachers attention.

What do I suggest for beginners? I have listed the classes below starting with the easiest and then progressing to the more advanced for beginners.

Intermediate classes are only suitable for students that have allready learnt the basics of ganaching and covering with sugar paste and now want to learn the next stage of design and decorating.You will need to attend either Beginners 2 or 3 first and then Beginners 5 ,6 or 7 class in order to attend any of the the intermediate classes.The designs are harder to create and you will need previous cake decorating skills achieved through previous classes and of course practice. The classes usually have a lot more to do and require practised skills, than say in a one day class suitable for a beginners.What do I suggest for intermediate students?
